South Africa impresses with scale and variety. Cape Town offers ocean views, beaches, and mountain backdrops all in one place. A short drive takes you to quiet wine farms or scenic coastal roads. Further inland, wide open spaces and wildlife reserves show nature at its most dramatic.

Much of life here happens outdoors. Meals are relaxed, sunsets are events, and the scenery often steals the show. You don’t need a strict plan — a drive, a viewpoint, or a nature walk easily becomes the highlight of the day.

Food & Recipe: South African Boerewors Recipe

Boerewors sits at the heart of any proper South African braai.

You will usually see boerewors coiled into a long spiral on the grill. This shape helps it cook evenly and stay juicy. Locals know it should never be rushed. Gentle heat keeps the casing from splitting and lets the fat melt slowly into the meat.

The basic recipe.  You can add and play with spices to make it your own.

Ingredients:

  • 5 kg Beef
  • 1 kg Pork
  • 1.5 kg Bacon

Spices & Flavor:

  • 2 tbsp Coriander (I prefer fine, but you can use either)
  • 1 tbsp Cloves (fine)
  • 1 1/2 tsp Nutmeg
  • 1 1/2 tbsp Allspice
  • 5 tbsp Vinegar
  • Salt and Pepper to season

How to make boerewors:

  • Mince the beef, pork, and bacon and mix well.
  • Mix all the spices and mix it into the meat, then add the vinegar.
  • Let it rest while you clean the sausage skins.

Mix everything again to ensure all the flavors are equally spread. 

Fill the sausage skins with the mixture.  (Having a machine to help you with this process makes life much easier.)

To serve:  Fry the sausage in a pan or over hot coals on an outdoor South African style braai.

Italy – Coastlines, Villages, and Everyday Beauty

Food & Recipe: Zabaglione for dessert

Zabaione or zabaglione is an Italian dessert, or sometimes a beverage, made with egg yolks, sugar, and sweet wine. Some versions of the recipe incorporate spirits such as cognac. The dessert version is a light custard, whipped to incorporate a large amount of air. Wikipedia

Zabaglione recipe - Experience 3 of the Most Incredible Destinations in the World (with food)

Ingredients:

  • 2 large Eggs
  • 6 large Egg yolks
  • 125 ml Sugar
  • 15 ml Lemon peel (grated)
  • 50 ml Lemon juice
  • 125 ml Madeira wine or a cream sherry

Which wine to use:  Traditionally Marsala wine was used in the recipe, but you can substitute Marsala with Madeira Wine or even a Cream Sherry.

How to make Zabaglione:

  • In a double boiler, combine eggs, egg yolks, sugar en lemon peel.
  • Beat with an electric mixer until light and very thick.
  • Stir in the lemon juice and wine.
  • Beat mixture until doubled in volume.  Remove from heat.

Serves 6 people.  You can serve it in stemmed glasses with ladyfingers or amaretti cookies.

Food & Recipe: Canadian Timbits

Timbits are bite-sized doughnut holes, made from doughnut dough, fried in vegetable oil. The Cinnamon-Sugar-Timbits from Anna Olson, are my favorites:

Ingredients:

  • ½ cup sour cream
  • ½ cup buttermilk
  • ½ cup sugar
  • 1 large egg
  • ½ tsp fine salt
  • 2 cup all-purpose flour
  • ¾ tsp baking soda
  • dash ground nutmeg
  • vegetable oil for frying
  • icing sugar for dusting
  • cinnamon sugar for coating

How to make Timbits:

1. Whisk sour cream, buttermilk, sugar, egg and salt together. Sift together flour, baking soda and nutmeg and add to sour cream mixture, stirring just to blend. Let dough sit while heating oil.

2. Heat 2 inches (5 cm) of oil in a high-sided pot to 350F (180C), measured on a fryer or sugar thermometer. With a small ice cream scoop or with a tablespoon, drop spoonfuls of dough carefully into oil. Let cook until doughnuts are a deep brown on one side, about 4 minutes, before turning and cooking to the same color on the other side (often they turn themselves over when they are cooked on one side!). Remove doughnuts with a slotted spoon and drain on paper towel.

3. Let doughnuts cool 10 minutes, then sift icing sugar on top and serve, or toss in cinnamon sugar while warm.
