Ingredients for making Coconut Ice
150 ml water
150 ml milk
900 g sugar
25 g margarine
225 g desiccated coconut
5 ml vanilla essence
Food coloring of your choice (traditionally only the colors white and pink are used to make coconut ice).
Coconut ice is a delicious treat during the summer time. Keep it in the refrigerator as a cold treat during hot summer days.
How to make Coconut Ice – the easy way
In a medium saucepan heat the water, sugar and margarine until all the sugar has dissolved.
Bring to a boil and let it cook for about 10 min, stirring regularly until it reaches a firm ball stage.
Remove from heat and add the vanilla essence and the coconut and mix until fluffy and creamy.
Pour half of the mixture (white) in a greased 20 cm tin.
Add the coloring to the remaining half and stir well.
Pour the pink mixture over the white and spread evenly.
Leave to set and when firm cut them into squares.

Coconut ice typically consists of a mixture of desiccated coconut, condensed milk, powdered sugar, and flavorings like vanilla or almond extract.
We think…perhaps the ‘original and traditional’ – home recipe is the easiest one.
Here is the traditional no bake sweet recipe that our friends in South Africa enjoy and love:
Ingredients:
350 g Coconut
405 g Sweetened condensed milk
350 g Sieved icing sugar (confectioners sugar)
1/2 Teaspoon vanilla extract
2 drops red food coloring
Method:
Add everything in a mixing bowl and stir really well until all ingredients are combined.
Color half of the mixture
And layer
Refrigerate for a minimum o 2 hours (or leave overnight).
