Braai side dish recipe What to make for a braai

Let’s face it:  Anything with cheese just tastes better.  You can add your own favorite spices or herbs.  I also love to make this recipe with paprika.  Lots and lots of paprika.  (Then I leave out the garlic.)

You can also add some freshly copped chives.  Cheese and Chives after all is an excellent combination.

But there is a secret…

The secret to success:  Using the best cheese you can afford.  Don’t skimp on the cheese.  The more the better and the best-matured cheese will give the best flavor.  However, it is again up to you.  If you only have plain cheddar in the fridge, use cheddar.

Or you can give it a bit of Italian flavor, by adding my favorite:  ParmigianoReggiano.

In Summary:  There is something wonderfully comforting about a tray of cheesy weekend potatoes coming out of the oven. The aroma alone sets the tone for a relaxed afternoon, perfect for lazy weekends when good food becomes part of the pleasure. Potatoes soak up flavor so well that even the simplest mix of cheese, herbs, and a touch of cream turns into a dish people remember. It works for almost any casual gathering. Friends arrive hungry, plates fill quickly, and the whole tray usually disappears before it has time to cool.

A big part of the charm is how effortless it is. Most of the work happens in the oven while you get on with the rest of your day. That makes it ideal for holiday homes, self-catering stays, or weekends where you’d rather be outside exploring than stirring pots in the kitchen. Potatoes travel well, store well, and suit nearly every palate, so you never go wrong packing a bag for your trip or picking up a few from the nearest village shop.

The recipe also adapts beautifully to the seasons. A handful of chopped spring onions gives it a bright touch in early summer. A sprinkle of smoked paprika or rosemary makes it cozy in winter. Hard cheeses deliver a deeper, stronger flavor, while a mild melting cheese creates that stretchy, creamy finish people love. Add bacon bits, caramelized onions, or roasted garlic when you want a little extra richness. Keep it plain for an uncomplicated side dish that goes with everything.

Serve it with grilled chicken, a simple salad, or your favorite weekend roast. No matter the setting, it adds a homely feeling to the table and brings everyone together. For more ingredient inspiration, you can browse reliable cheese styles and cooking tips at https://www.cheese.com/
