Who doesn’t love a sweet treat every now and then? Carrot cake is a favorite in many homes, but often the recipe is so complicated that you are too scared to try it. Here is an easy recipe to follow.
Origin of the cake
The origins of carrot cake are still disputed.
According to Wikipedia there are many different published recipes and as for which one is actually the true authentic recipe and origin of the cake as we know it today, is open for discussion.
However, fact is that today it is still very popular in Switzerland, England and basically all around the world.
Although our recipe is probably not the original Swiss version, it is easy and it is a great recipe for beginner cooks to start with.
Lemon, Cream Cheese Frosting for Carrot Cake
250g (9oz) Philadelphia cream cheese
200g (7oz) unrefined icing sugar, sifted
1tsp pure vanilla extract
juice of ½ lemon
Mix everything together and, using a palette knife, spread over the cake.
When grating the carrots, select the finest holes on a cheese grater and shred the carrots carefully. This way it will soften quickly during the baking process.
