Tomatokeftedes - Santorini Tomato Fritters

When visiting Santorini, these delicious treats are a must-have.  They are made with ripe, sweet tomatoes and then flavored with feta cheese, basil, oregano, and sweet red pepper. Served with Greek yogurt and cream cheese dip, you have an excellent light and refreshing combination for lunch or just as a snack.  Let’s go on a trip to the beautiful coast of Santorini.

What is Tomatokeftedes?

It is fried tomato balls or fritters, usually served as an appetizer on the Greek island of Santorini.

YOU’LL NEED:

Sweet, ripe tomatoes:  Roma tomatoes are best for this recipe.  Using the best and freshest ingredients makes this recipe so much more than just an ordinary fritter.  

Recipe for Greek Tomatokeftedes - Santorini Tomato Fritters

Place of Origin:  Greece

Difficulty:  Easy

Ingredients:

  • 620 grams of tomatoes
  • ½ medium-sized red onion (finely chopped)
  • ½ red pimento pepper (or other sweet red pepper)
  • 2 tablespoons olive oil
  • 6 fresh basil leaves
  • 100 gr Feta cheese
  • 1 spring onion
  • 1 ½ tbsp dried oregano
  • 130 grams of Cake Flour (All purpose flour)

How to make the fritters:

  • Cut the tomatoes in half, remove the insides and add them into a food processor or blender together with the red pepper.  Blend until smooth. 
  • Place the tomato mix into a non-stick pan along with some olive oil and cook for about 6 minutes until thickened.
  • Add the rest of the ingredients and mix well.  (Add the feta lastly.) Keep in mind that you may need more or less flour depending on the consistency. (It should not be too runny, more like a thick cake mix.)
  • Heat your oil in a non-stick frying pan.  Once the oil is hot, take spoonfuls of the fritter mixture and add them to the hot oil. Keep some distance between each fritter. 
  • Cook for about 6 minutes until they have a golden color.

Once you’ve combined your ingredients you have to use them as soon as possible, or else they will become soggy.
