I improvised a bit on this one, using shop bought pastry, as I understand that sometimes we need a recipe that is quick and easy to make, but still impressive and delicious.  This tomato tart recipe, is a favorite in my home.

Summer Tomato Tart Recipe

– A 5 Ingredient Recipe –

Ingredients:

  • 1 packet of puff pastry (defrosted)
  • 2 tbsp. Extra Virgin Olive Oil
  • 1 small container Feta Cheese – (or more if you like)
  • Fresh basil
  • ½ tsp. Salt
  • ± 350 g Cherry Tomatoes

***Using a combination of different and colorful tomatoes makes it look even prettier.

How to make the tomato tart:

  • Place the pastry on a baking dish and poke a few holes all over with a fork.  (Leaving about a 1 cm rim where you don’t poke holes in the pastry.)
  • Sprinkle some olive oil all over.
  • Cut the tomatoes in half and spread it over the pastry.
  • Crumb the Feta chees on top and sprinkle with the rest of the olive oil.  (You can use a little bit more if you like.)
  • Break the basil leaves and decorate to top the tart.
  • Bake in a pre-heated oven at 180 ˚C for 30 minutes or until golden brown.

More options:  You can make smaller individual tarts as well.

Did you know?

To “dock” a pastry means to prick a pie crust with a fork before baking.

It is just a way to poke holes in the pastry dough and allows the steam to escape so that the pie crust doesn’t puff up in the oven.
