TASTY SWEET & SOUR GREEN SALAD

I just love a quick and easy salad that adds that special touch of love to a meal! And this Sweet & Sour Green Salad proved to be a winner with my friends and family.

I don’t emphasize the quantities because the salad lends itself to complete freedom in terms of quantity. In other words, it’s all up to your personal taste.

Time: It should take you between 10 and 15 minutes from start to finish!

Ingredients

Baby spinach leaves
Fresh tomatoes
Red or yellow paprika
Danish feta cheese

What you need for the salad dressing

Juice from ½ lemon
Maple syrup

What you need for the garnish

Almond flakes, unsalted

How to make a tasty Sweet & Sour Green Salad

The first layer is your rinsed baby spinach, followed by tomatoes chopped (roughly 1 x 1 cm).
Then add a light layer of red or yellow paprika chopped into ½ x ½ cm, followed by Danish cheese (break with your fingers and sprinkle to taste).
Add the salad dressing: Evenly spread the juice of ½ lemon and approximately 1 teaspoon maple syrup.
To garnish, brown the almond flakes in a flat pan over high heat (this should go QUICK) and sprinkle the toasted flakes on top.

NOTES: These are the variations I’ve tried thus far.

You may replace the spinach leaves with rocket leaves, and an extra bit of maple syrup.
Sun-dried tomatoes may replace fresh tomatoes. Again add a slight bit more maple syrup. The sun-dried tomatoes go down very well in the winter.
Don’t be shy with the roasted almonds because it really adds great flavor to the salad!
Lastly, if you put out all the ingredients ahead of time, you can easily make it just before you start serving. That way you’ll have the smell of freshly roasted almonds hanging in the air.
Our tasty Sweet & Sour Salad makes for a great summer dish with a chicken fillet or fish.
