At the ‘end of the month’ I leave out the pineapple and walnuts, mix in a little bit of syrup, and it still tastes great.

Easy to Make
Ingredients:
4 medium Sweet Potatoes (more or less 1 kg) – washed
1/4 cup packed with Brown Sugar
1/4 cup Margarine
1/2 teasp Salt
250 gr crushed Pineapple
1 tbsp packed Brown Sugar
1 tbsp Margarine
1 tsp Water
1/2 tsp ground Cinnamon
1/4 tsp ground Nutmeg
1 1/2 cup Marshmallows
1/4 cup chopped Walnuts

How to make the sweet potato casserole:
Peal and slice the potatoes.
Arrange in microwave oven dish and microwave on high until tender. (8 to 10 min.)
Add 1/4 cup brown sugar, 1/4 cup margarine and salt.
Mash until no lumps remain and mix in the pineapple.
Microwave on HIGH (100%) for about 2 minutes, stir and set aside.
Place 1 tbsp brown sugar, 1 tbsp margarine, the water, cinnamon and nutmeg in a separate bowl and microwave on HIGH (100%) until the margarine melted. (stirring a few times)
Add some of the marshmallows and mix.
Top the sweet potato mixture with the remaining marshmallows (enough to cover) and Microwave at HIGH (100%) until the marshmallows are melted and the sweet potatoes are heated through (about 4 minutes).
Sprinkle with walnuts (chopped finely or whole – just as you love them) and serve hot.
MY TIPS for a fabuloussweet potato casserole:
I love using the orange fleshed sweet potatoes, but you can use any type of sweet potato or yams.
