Delicious Ukranian Pampushky

When times are hard, you long for those home baked recipes… Something like Pampushky.

The easy recipes that can either be just plain hearty food or which can be dolled up by just adding another ingredient. 

This is one such recipe that can feed a crowd but also be the star of your next family gathering. 

Made with basic ingredients, it is something you can easily make at home with only the few things in your cupboard.

  • 1 cup (250 ml) milk 
  • 1 packet active dry yeast
  • 2 tablesp. sugar
  • 2 tablesp. sunflower oil 
  • 3 cups (380 g) all-purpose flour
  • 2 teasp. salt
  • 1 egg, lightly beaten

How to easily make pampusky:

  • Heat the milk until it is just warm to the touch and add the sugar and yeast (the milk must not be too hot). Mix it all together and let it stand to allow it to activate and become foamy (for about 5 min.).
  • Then add the oil, flour, and salt. Mix until the dough starts to form a soft ball. Then knead for another 10 minutes until the dough becomes elastic (not sticking to everything anymore).
  • Add the dough to a lightly oil-bushed bowl, and cover with a clean damp kitchen towel or cling wrap. Let it sit to rise for 1-1½ hours, or until doubled in size.
  • Then punch it down to remove the air and transfer it to a clean surface.
  • Divide the dough into 8 equal-sized pieces (it must be exactly the same) and roll each piece of dough into a ball shape.
  • Lightly grease your baking dish.
  • Beat the egg for the egg wash. Place each ball of dough in the baking dish, with an equal distance between each ball.
  • Cover with cling wrap and allow the dough to rise a second time until the rolls have risen enough to fill the pan.
  • Brush the tops of the dough with the egg wash and bake for 25-30 minutes, until golden brown.

Traditionally they are baked and topped with a garlic oil, but they may also be fried.  Then serve them with any jam you like.  Or just bake them and eat them with butter.  The choices are endless as this is really a basic recipe ready for you to prepare as you like.

How to make the garlic oil – or non garlic – topping:

Mix crushed garlic, olive oil and parsley together. (This is all according to your taste.)  If you don’t have or like garlic, you can do it with butter and parsley as well.

You can use either fresh parsley, which is very nice, or dried will work as well (if that is all you have).

Brush the buns with the topping as soon as they come out of the oven.
