BUTTERMILK RUSK RECIPE

Just Mix and Bake

I got this microwave buttermilk rusk recipe from a friend many years ago, and it is still a firm favorite in my home as it is so easy to make.

Rusks are delicious treats that are served with coffee (or tea) any time of day from early morning to late evening in South Africa. People gather around a cup of coffee and rusks. One of the firm favorites amongst locals is the traditional Buttermilk version. However, if you don’t have the time to slave in front of the oven, you need a recipe that is “mix and bake”-friendly. So here it is:

Microwave Buttermilk Rusk Recipe

Ingredients:

500 g Margarine
500 ml Brown Sugar

Melt the above ingredients together.

500 ml Buttermilk (good quality)
2 Eggs

Mix the above ingredients in a separate mixing bowl.

1 Kg Self-Raising Flour
1 ml Baking Powder
1 tsp salt
1/2 cup of Nutty wheat flour / or Wheat Bran (Which ever one you choose will have an effect on the texture of the rusks. But any one of these will do.)

Additional: You can add a handful of raisins or cranberries if you like.

Method:

Mix everything together and divide equally between three 2L-icecream tubs.
Microwave each on High (100%) for 10 minutes. If not done add 1 minute, but don’t overdo it.
Cut the rusks and dry them in the oven at 100C until crisp.
