I received this recipe for a creamy potato soup from my friend in South Africa. She says it’s a family favorite in her home. Try it and let us know what you think, on our new Facebook Group: Reis en Huis
INGREDIENTS:
• 10 Potatoes
• 1 L Water
• 40 ml Butter
• 3 Onions, finely chopped
• 10 ml Salt
• 2 ml Pepper
• Pinch of Nutmeg
• 15 ml Parsley
• 2 Eggs
• 375 ml Cream
• 10 ml Worcestershire sauce

How to make a creamy potato soup:
• Peel, cut into cubes and then boil the potatoes in the water until soft.
• Crush the potatoes in the water. (don’t throw the water away)
• Fry the onion in the butter until brown and add to the potatoes.
• Add salt, pepper, nutmeg, and parsley.
• Beat the eggs and cream together. Add it to the potato mixture and mix well.
• Add the Worcestershire sauce and let the soup boil.
• If the soup is too thick, you can add a little more milk.
• Serve hot.

You can adjust this recipe as you like.
Add a bit more parsley, keep the potatoes chunky, add some carrot, or just serve it with a sprinkle of bacon or your favorite chopped chorizo sausage on top.

In South Africa, there is an area in the Western Cape, between the ‘Swartland’ and the West Coast, that they call “Die Sandveld”.
Although it is not the biggest producer of potatoes in SA, this region is famous for its potato production.
However, the area in and around is very beautiful. Places like Piketberg, Moorreesburg, Koringberg, and more, are especially beautiful during the wheat growing season.
Stop on the route during harvest season and watch the farmers as they harvest wheat.
If you’re traveling through this part of the region on your way to Clanwilliam, do support the businesses in the area. And if you’re in the area during September months, keep an eye out for the “Moorreesburg Skou”.
