Cheesy Comfort Food Recipe with Mince

This recipe is great for weekday dinners or weekend lunches with friends.  Cheesy comfort food is always a favorite with my family and friends because it makes us ‘feel good’.

The great thing about this recipe is, that you can make it quickly and without a lot of effort, but you’ll have that tasty homemade comfort that we all sometimes crave.

Tip: You can buy pancakes ready-made as well as the white sauce, as long as you then use good quality cheese and lots of it.  However, I do prefer it all homemade.

The perfect family pleaser and Weekday Dinner Hero

Traditionally Cannelloni is a cylindrical type of lasagna generally served baked with a filling and covered with a sauce.  The correct Italian Cannelloni tubes are not always available in shops around the world.  Therefore, I have adjusted the recipe to be made with pancakes.

This recipe is not Italian, it is my version of comfort food, based on Cannelloni.

Ingredients

You’ll need 3 things:

  • Ready-made pancakes  (it is easy to make your own if you follow our recipe.)
  • A Mornay Sauce (See recipe below)

And for the Filling you’ll need:

  • 450 g Ground Beef
  • 2 Onions
  • 2 to 4 Carrots
  • 1 Celery stalk
  • 3 large Tomatoes and 2 Tblsp Tomato Puree
  • 6 Tblsp Fruit Chutney
  • 2 Tblsp Worcestershire Sauce
  • Garlic flakes (Optional)
  • 1 Cup of your favorite deep red wine

How to make the filling

  • Fry the chopped onions, chopped carrots, and chopped celery in a small amount of butter and oil. 
  • Add the ground beef and continue to fry over a gentle heat, adding the tomatoes, puree, chutney, and Worcestershire sauce. 
  • After about 5 minutes, add the red wine and simmer for about 20 min until the vegetables and meat are soft.  

Assembling and Baking

  • Spread a little of the mornay sauce in the bottom of an ovenproof dish.
  • Roll each pancake with a ground beef/mince filling and lay them next to each other in the dish.
  • Pour the rest of the mornay sauce over and sprinkle with an extra generous helping of Parmigiano Reggiano.
  • Place in a pre-heated oven at 180 degrees, and bake for about 20 minutes until the cheese is melted.
Classic White Sauce Recipe

The basic Béchamel sauce is also known as white sauce

  • 2 Tblsp butter or margarine
  • 2 Tblsp all-purpose cake wheat flour
  • a Pinch of salt
  • 1 Cup Full-cream milk 

 

Finely grated nutmeg can be added if you wish, according to taste.

Mornay sauce is simply a Béchamel sauce with grated cheese.

  • For this recipe, you’ll need 8 Tblsp Butter / 8 Tblsp Flour and 1 Litre of milk.
  • Add to the white sauce a combination of your favorite cheeses and mix well until melted.

You can use different combinations of cheese, like  Gruyère, Emmental cheese, cheddar, or even Parmesan cheese.

You can serve this delicious comfort food with freshly baked bread and/or a green salad of your choice.
