How to make coconut ice pink sweet snacks for holidays and vacations

Ingredients for making Coconut Ice

150 ml water

150 ml milk

900 g sugar

25 g margarine

225 g desiccated coconut

5 ml vanilla essence

Food coloring of your choice  (traditionally only the colors white and pink are used to make coconut ice).

Coconut ice is a delicious treat during the summer time.  Keep it in the refrigerator as a cold treat during hot summer days.

How to make Coconut Ice – the easy way

  • In a medium saucepan heat the water, sugar and margarine until all the sugar has dissolved.
  • Bring to a boil and let it cook for about 10 min, stirring regularly until it reaches a firm ball stage.
  • Remove from heat and add the vanilla essence and the coconut and mix until fluffy and creamy.
  • Pour half of the mixture (white) in a greased 20 cm tin.
  • Add the coloring to the remaining half and stir well.
  • Pour the pink mixture over the white and spread evenly.
  • Leave to set and when firm cut them into squares.

Original Recipe:

Coconut ice typically consists of a mixture of desiccated coconut, condensed milk, powdered sugar, and flavorings like vanilla or almond extract.

We think…perhaps the ‘original and traditional’ – home recipe is the easiest one.

Here is the traditional no bake sweet recipe that our friends in South Africa enjoy and love:

Ingredients:

350 g Coconut

405 g Sweetened condensed milk

350 g Sieved icing sugar (confectioners sugar)

1/2 Teaspoon vanilla extract

2 drops red food coloring

Method:

  • Add everything in a mixing bowl and stir really well until all ingredients are combined.
  • Color half of the mixture
  • And layer
  • Refrigerate for a minimum o 2 hours (or leave overnight).
