The best thing is you can make it ahead and freeze it.  Then just heat in the microwave (if you have one at your vacation destination) when you’re ready to serve.

What you'll need to make them

Igredients

  • 450 gr breakfast sausage (or any cooked meat, like left over Sunday roast or even chicken and bacon)
  • 1 red onion (diced)
  • 15 large eggs (whisked)
  • 1 bell pepper without the seeds (diced)
  • 1 cup Cheddar cheese (grated)
  • 1 pinch of salt and black pepper to taste

How to Make the Breakfast 'Muffins'

  • Preheat oven to 170°C. Spray your muffin tin with cooking spray.

 

  • Sauté the onion in a pan.  When almost done, add the cooked breakfast sausage or meat, and stir-fry for a few seconds just to let the flavors marry and mix.  Set aside to cool.

 

  • Mix the whisked eggs, cheese, and bell pepper. Add to the above mixture only when the sausage and onion are cooled, and season with salt and pepper to taste.

 

  • Spoon into the muffin cups.

Bake for 20-22 minutes until set. (for regular size)

You can add parsley or you can add paprika…  Play with the recipe and find your own favorite version.
